Potato, Mushroom, Carrot, and Squash Stew

    Ingredients:
    -One onion
    -8 glove of garlic
    -2 pounds of mushroom
    -Tomato paste
    -Curry powder
    -Oregano
    -4 potatoes
    -5 carrots
    -Half a large butternut squash
    -Vegetable (or chicken) broth
    -Butter
    -Heavy cream
    -Lemon

Instructions:
1. Cook onion, garlic, and mushroom with tomato paste, curry powder, salt, and oregano until the onion is translucent.
2. Add chopped potato, carrot, and butternut squash. Cover with vegetable or chicken broth and cook for about 20 minutes.
3. Once potatoes are tender, remove 1/3 of the potatoes and mash them in a bowl with a generous amount of butter and cream. Put the mixture back in the stew, and add lemon, salt, and more cream to taste.
