Sweet Potato and Zucchini Curry

    1 large sweet potato
    2 tbsp olive oil
    1 zucchini
    1 bell pepper
    3 cloves garlic
    1/2 tsp ginger
    2 tbsp curry paste
    1 large tomato
    2 tablespoons of cilantro
    1 medium onion

Chop all the vegetables, garlic, ginger, and cilantro.
Heat oil in a large frying pan. Add the onion, garlic, and ginger, and cook for 5 minutes over medium heat. Add the curry paste, and mix to combine.
Add the tomatoes and cook for 2 minutes. Add the vegetables and cook until the vegetables are soft.
