Romanesco broccoli, also known as Romanesco cauliflower, is a cultivar of the cauliflower family (Brassica oleracea var. botrytis), not broccoli. It's known for its distinctive green, spiraling form and a flavor that's mild, nutty, and slightly sweet. Romanesco can be used in similar ways to cauliflower, such as roasting, stir-frying, or as a raw ingredient in salads or dips
